Warm salad of shrimp, arugula and feta

Packed with healthy antioxidants and minerals, this salad is great as an appetizer or main course.

Ingredients:

3 servings:

  • 500 g raw shrimp;

  • 2 green onions, chopped;

  • 2 small sweet tomatoes, cut into cubes

  • 1/2 red bell pepper, chopped

  • 200 g canned chickpeas, drain and rinse chickpeas

  • 1 teaspoon chopped dill;

  • 3 teaspoons finely chopped basil;

  • 1 teaspoon of olive oil;

  • 2 finely chopped garlic cloves;

  • 2 teaspoons of lemon juice;

  • 150 g of arugula;

  • 50 g low-fat feta cheese;

  • finely chopped red chili pepper (amount to taste).

Cooking method:

Clean the shrimp. In a bowl, combine the onions, tomatoes, bell peppers, chickpeas and herbs. In a frying pan or wok, heat the minimum amount of oil, add the shrimp and cook for about three minutes at a high temperature, stirring constantly. Add chilli and garlic to shrimp and cook until shrimp turn pink. Remove shrimp from heat and drizzle with lemon juice. Take a large flat plate, put the arugula, vegetable mixture and shrimp on it. Crumble cheese on top.
