Rice noodles with garlic and ginger shrimp

This dish is quite easy to prepare. It is nutritious and contains a small amount of fat.
Ingredients:
2 servings:
500 g raw king prawns;
200 g rice noodles;
1 teaspoon sunflower oil;
2 finely chopped garlic cloves;
1/2 ginger root, finely chopped;
1 finely chopped chili pepper;
3 finely chopped coriander roots;
4 green onions, chopped into pieces about 1 cm long;
1/4 red bell pepper, thinly sliced;
1 tablespoon lemon juice;
60 ml of white wine;
1 teaspoon fine cane sugar;
1 teaspoon fish sauce.
Cooking method:
Clean the shrimp. Place the noodles in a heatproof bowl, cover with boiling water and soak for eight minutes, or until the noodles are soft. Then drain the water. Turn on the wok, spread the minimum amount of oil over the entire surface. Fry the shrimp, garlic, ginger, chili and coriander roots, preferably in two batches of 1-2 minutes over high heat, or until the shrimp turn pink. Transfer the shrimp to another bowl. Add green onions and bell peppers to the wok. Cook over high heat for 2-3 minutes. Add lemon juice, wine and sugar and cook until the liquid is reduced by about 2/3. Put the shrimp and fish sauce into the wok and mix gently. Serve with noodles. To reduce the amount of fat, you can not use oil at all, this is possible if the surface of your wok is non-stick.
