Beef with coriander and rice noodles

Without a doubt, the combination of lime juice and coriander gives a special taste to this dish. For best results, marinade for meat is recommended to prepare in advance and infuse for several hours.

Ingredients:

2 servings:

  • 2 finely chopped garlic cloves;

  • 1/2 teaspoon finely chopped ginger;

  • 1 small handful chopped coriander roots, stems and leaves, plus 1/2 bunch more leaves;

  • 1 tablespoon sunflower oil and wok spray;

  • 250 g beef fillet;

  • 200 g rice noodles;

  • 1/2 red onion, finely chopped;

  • 1/4 red bell pepper, thinly sliced;

  • 1 tablespoon lime juice;

  • 1 tablespoon reduced salt soy sauce

Cooking method:

To make the marinade, combine the garlic, ginger, whole chopped coriander and 2 tsp. l. oils in a large non-metal bowl. Cut the beef into thin pieces across the grain, put in the marinade. Cover with a plastic lid and refrigerate for two hours. Place the noodles in a heatproof bowl, cover with boiling water and soak for eight minutes or until the noodles are soft. After that, drain the water. Heat wok to high heat and spray with oil. Add meat and fry for 2-3 minutes, it is better to divide the entire amount into 2 parts. Remove the cooked meat from the wok and keep warm. In between cooking the first and second batches of meat, heat the wok and oil it further. Heat up 1 tsp. l. oil in a wok, add the onion and cook over medium heat for 3-4 minutes. Add pepper and cook for another 3-4 minutes, stirring constantly, shaking the wok. Add all meat to wok, also add lime juice, soy sauce, 2 tsp. l. water, an additional bunch of coriander leaves and rice noodles. Shake, then remove from heat, salt well and season with freshly ground black pepper, serve.
